Delicious Raspberry Vinaigrette Dressing
For this dressing I use plant based sugar. You can use lemon juice or squeeze half of a lemon to make the dressing. Normally I buy the 6 oz package which would be the total amount needed to make the dressing. At the time Costco had raspberries on sale so I had a big container of them and had to measure up a cup (6oz) to use.
Ingredients
- 1 cup raspberries (6 oz), rinsed
- ½ cup extra virgin olive oil
- ¼ cup apple cider vinegar
- 2 tablespoons sugar
- 1 tablespoon fresh squeezed lemon juice (roughly half a lemon)
- ½ tsp minced garlic (wet)
- ¼ tsp salt
- Fresh pepper to taste
Make it
Add all ingredients into a blender and blend until smooth. Pour into salad shaker (or container) and serve. It will last in the fridge about 7 days.
TIPS:
Substitute a plant based sugar for lower calories and less sugar intake. It tastes just as good believe me!
If using the dried minced garlic you ill need to blend a little longer in order to not have the crunchiness from it in the dressing.
Use an Apple Cider Vinegar (ACV) with The Mother in it for a more organic and better flavor. Plus it has more health benefits compared to regular ACV.
